Cheese elaborated with goat raw milk and aged with extra virgin olive oil. The colour of the dough is medium yellow. The flavour is intense, spicy and very peculiar. The texture is medium and fragile. The predominant smell is olive oil, goat milk and aromatic herbs.
It shows a long persistence in mouth and a very characteristic and exclusive aftertaste of cheese from goat. Medium burning aftertaste. This cheese is cured for a minimum period of 5 months.
