Cheese elaborated with pasteurized goat milk, aged with extra virgin olive oil. The colour of the dough isyellowish. It has an intense flavour and a spicy touch. The texture is soft and fragile. The predominant smell is olive oil and aromatic herbs. It shows a persistence in mouth and a very pleasant and exclusive aftertaste of goat cheese. The burning aftertaste is medium and it appears late. This cheese is cured for a minimum period of 7 months.
This product has been several times winner of the First Prize in the category of cheese from goat milk in the Andalusian Artisan Cheese Awards held on Teba (Málaga) and in the contest held on Villaluenga del Rosario (Cádiz).
Moreover, it is Winner of the First Prize Gold Capraespaña as the best hard-dough cheese from goat milk in Spain, and winner of the First Prize Capraespaña by the Goat Cattle National Summit held in Talavera de la Reina (Toledo).
